...a Journeyman 120 in 1095 carbon steel and purple G10, with brass mosaic pins ($350—Sold), a Journeyman 240 in 52100 carbon steel and cherry, with copper pins ($650—Sold), a Prospect 120 in AEB-L stainless and ash, with white and brass mosaic pins ($350—Sold), a Prospect 240 in AEB-L and spalted maple(!), with brass pins ($650—Sold), a Journeyman 180 in 52100 and black and blue G10, with steel brass and blue mosaic pins ($500—Sold), a Journeyman 240 in 52100 and burgundy G10, with steel mosaic pins ($650—Sold), a Journeyman 120 in 1095 and black walnut, with brass mosaic pins ($350—Sold), and a Journeyman 180 in 52100 and funky maple, with brass mosaic pins ($500—Sold).

All that awesome wood comes from Megan Offner of NY Heartwoods up in Kingston, NY, and all mosaic pins are by the indomitable Sally Martin of Provision Forge in Oregon. All of these also come with sayas made for each here in the shop.

Welcome to Cut Brooklyn. I’m Joel Bukiewicz, owner and operator of a Brooklyn workshop where I design and craft world class kitchen cutlery for the New York City area and beyond. I handcraft all the pieces found on these pages one at a time in my shop, from the finest materials available and with the care and attention to detail that precision cutting tools deserve.
